Creamy Shatavari Rice Pudding (The Coziest Breakfast Ever)

If you're looking for the ultimate comforting breakfast, look no further, this is it.

Creamy, warming, gently spiced, naturally sweet, and surprisingly easy to make. Whether you're postpartum or simply craving something nourishing, this bowl is one we come back to again and again.

This is what you'll need

  • 500 ml water
  • 150 g rice (I love jasmine rice)
  • 500 ml coconut milk
  • 65 g coconut sugar
  • 100 g raisins
  • 1 tbsp butter or ghee
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • ½ tsp cardamom
  • ½ tsp shatavari powder (you can easily find it online)
  • ¼ tsp salt
  • Maple syrup, to taste

How to make it

  1. Bring the water to a boil. Add the rice, cover, and simmer on low for about 20 minutes, until soft.
  2. Add the coconut milk, coconut sugar, cinnamon, cardamom, shatavari, and salt.
  3. Cook for about 25 minutes, stirring regularly, until thick and creamy. The rice should start breaking down into a creamy texture. If needed, cook a little longer and add a bit of water.
  4. Stir in the raisins, vanilla, and maple syrup. Cook for another 2 minutes, stirring continuously.
  5. Remove from the heat, stir in the butter or ghee, and serve warm.

Honestly... it's one of the coziest breakfasts you'll ever eat.
