The Chicken Soup We Come Back To Again and Again 🍜
There’s something about a chicken soup that just… lands.
This delicious Ginger, Red Dates Chicken Soup is inspired by traditional Chinese healing broths, the kind that have been made for generations to support recovery, restore energy, and gently nourish the body.
With ingredients like ginger for warmth, red dates for replenishment, and goji berries for balance, it’s a way of cooking that’s rooted in care.
Especially in postpartum, these kinds of slow-simmered soups are a staple.
Not just for nourishment, but as a form of support, something warm, ready, and easy to eat in the in-between moments.
IngredientsÂ
- 500–600 g chicken legs
- 1.2 - 1.5 L water
- 2 medium onion, roughly chopped
- 10–15 g ginger, sliced
- 3-4 carrots, chopped
- 3–4 dried jujube (red dates), pitted and slicedÂ
- 1 tablespoon goji berries
- salt and black pepper (adjust to taste)
Method
- Place the chicken in a pot and cover with cold water. Add fresh water (about 1.2–1.5 L total), then add the onion and ginger.
- Bring everything to a gentle boil, then reduce to a low simmer. Let it cook slowly for about an hour (the longer, the richer the broth) skimming off any foam that rises to the surface.
- Remove the chicken, shred the meat, and return it to the pot.
- Add the carrots and jujube, and let it simmer for another 30–40 minutes, until everything is soft and the broth is rich.
- In the last 10 minutes, add the goji berries.
- Season with salt and pepper at the end, tasting and adjusting as needed.
A small note
This isn’t about perfection. It’s about having something warm, ready, and nourishing when you need it most. Make a pot, keep it in the fridge, and come back to it over a few days. It only gets better.
